UK apples, UK approach

Our Artisan Series ciders represent (for us) larger-volume releases typified by UK cultivars and a UK-style maker approach. Given the “vintage” quality of the bittersweet and bittersharp varietals grown for them, these ciders are big on personality - and represent many of our most distinctive, well-loved offerings. Look for Artisan Series ciders in select PNW grocery stores, bottle shops, at our downtown Spokane taproom, or purchase online.


 
 

55 Chain

By antique English measure, 55 chain is the height of Steptoe Butte, a famous landmark near where our apples are grown. Made in the UK “West Country” style, featuring tannic English varietals (Dabinett, Chisel Jersey and Brown’s apples), native yeast, oak barrels and lots of time. A 2021 and 2023 Good Food Awards™ Winner!

Suggested pairings

Sharp cheddar, figs and prosciutto, smoked duck, roast vegetables, or bread and butter pudding.

6.5% ABV • 500 ml

Raven Oak

A blend of Dabinett, Chisel Jersey and Brown’s cider apples, we complete Raven Oak’s fermentation in charred whiskey barrels from Dry Fly™ distillery. Ripe apple, quince, current and anise notes, with hints of fig and vanilla – backed (of course) by oak and whiskey notes. 

Suggested pairings

Enjoy on its own pair with cheese and charcuterie, hearty appetizers, duck, pork or rich casseroles.

Finished Gravity = 1.008 (Off-Dry) 


7.4% ABV • 500 ml

Kingston Black

Notoriously hard to grow, Kingston Black is nonetheless the world’s most renown cider apple, presenting an ideal balance of flavor, tannins and acidity. Complex and layered – green apple, tangerine and spicy flavors with hints of caramel and earthy funk; medium tannins and acidity. A 2022 Good Food Awards™ Winner, and one of our very best!

Sharp cheddar, figs and prosciutto, seared duck, pork, roast vegetables

5.2% ABV • 500 ml

Brown’s Apple

Noticeably pink from the apple’s red flesh, this single-varietal cider’s pleasant, bittersweet nose leads to baked apple, strawberry, stone fruit and burnt sugar flavors. Like all Liberty ciders, this offering is wild-fermented, dry and fruit-forward, showcasing the wonders of lovingly-grown, Inland Northwest apples. 

Suggested Pairings

Enjoy as a sipper, or with charcuterie and chèvre; apple-glazed pork; grilled vegetables or bread pudding.
