Reserve Series ciders begin as nano-batch labors of love, offered first to our Core Club family. Remaining stock are usually sold on-site or on our online store. Often, Reserves are rare, ultra-wonderful single-varietals like Kingston Black, Fillabarrel or Dabinett grown by our good friends at Steury Orchards; sometimes, they’re hard-to-make blends or hybrids like cyser (mead-cider blend); on occasion, they’re French-style keeved cidré, or New England style cider (fermented with dried currants or raisins). Look for these in our downtown Spokane taproom, or purchase online. Do you deserve reserve? (Why yes, you do!)
Porter’s Perfection
ENGLISH STYLE | 09.20
Discovered in Somerset UK, Porter’s Perfection apples are considered an excellent bittersharp varietal, despite their small size and lumpy appearance. Mild bittersweet funk on the nose, leading to dried pear, ginger spice and grassy notes plus a strong tannic finish. Bottled still.
Suggested pairings
Enjoy as a sipper, or pair with sharp Cheddar and Stilton cheese, roast duck, pork or rich casseroles.

Major Hewes
English style | 07.20
A blend of British cider apples (Major) and one of the most storied American cider apples (Hewe’s Crab). Aged to perfection with a small amount of keeved cider added at bottling. Starchy apple and quince flavors with peaty earth, mild bittersweet funk and medium tannins. Bottled still.
Suggested pairings
Charcuterie, Manchego cheese and baguettes; savory galletes; maple-glazed roast vegetables; cheesecake.

Dabinett

Dabinett apples have been a favorite cider varietal since their 1900-ish discovery in Somerset, UK. Butterscotch aromas open for quince, apple peel, dried fruit, white pepper and tarragon flavors, with a strong oaky tannic finish. Bottled still.
Suggested pairings
Enjoy on its own or with roast duck, goat cheese, figs, dates and charcuterie.

Kingston Black
English Style | 06.20
Notoriously hard to grow, Kingston Black is nonetheless the world’s most renown cider apple, presenting an ideal balance of flavor, tannins and acidity. Baked apple and dried fruit flavors over white pepper, caramel and oaky notes; medium tannins. Delicious!

Splintercat
Cyser | 02.20
A cyser (cider-mead hybrid) made from Dolgo crabapples and honey from Sunny Valley Apiaries in Sprague WA. This cyser has a dual nature, balancing it's relative sweetness with a tart, crabapple finish. Rich and full-bodied, enjoy this one's berry notes, citrus bite and unmistakable honey character. Bottled still.

Enjoy this uniquely wonderful libation as an apéritif, or pair with soft artisan cheeses or creamy desserts.
